Quando estiver fervendo, diminua o fogo e vá acrescentando sulfato de cálcio ou sulfato de magnésio (sal amargo) aos pouquinhos e mexendo até o leite coalhar. Para 1 litro de leite, uma colherinha de chá do sulfato escolhido.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;&lt;span style="font-weight: bold;"&gt;Forre com um pano fino uma forminha furadinha qualquer (uma marmita furadinha no fundo por exemplo). Despeje o leite coalhado e coloque, levemente, um pequeno peso em cima. Deixe escorrer.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;&lt;span style="font-weight: bold;"&gt;Você pode, assim que o soro estiver escoando, antes da massa aglutinar-se, despejar mais água quente para lavar a massa.
